Whatever the reasons, everyone should try to be smarter than the lobbyists and marketing execs, especially when it comes to food.
Most people know whole food that you cook at home is better for you. To some that will make a difference, to others it won't.
The government does "spur" industries and food. Has someone in government once said "so what if it makes them fat?! It keeps the medical industry booming."
Wouldn't surprise me. I'm not about conspiracy theories, life has been like that ever since there were humans.
Humans have bred a lot of the nutrition out of food over hundreds of years to make it more abundant or appealing to the masses.

Those books are not 'evidence' by any stretch of the imagination. The 'findings' of William Davis have been rejected by the legitimate scientific community as a whole. He's just another whackjob selling books, associated with that other frootloop 'Dr. Oz'.

You can't refute any evidence that the number of products sold that are gluten free (regardless of nutrition) continue to rapidly expand in market share and will continue to do so. It sure does appear that many people are purposely reducing wheat consumption, even if they do not have celiac disease or gluten intolerance.

It's a big money-maker. Just like the low-fat craze created thousands of low-fat products. And oh - I remember some crazy diet where you could eat high protein - you could have steaks all day, and pork rinds, and there was a glut on pork rind brands for a few years.
Let's not forget SlimFast - and the diet pill craze. Oh and greek yogurt, may it some day die the ugly death it deserves and bring me back my normal yogurt, which has disappeared from the shelves.
Whatever the "health fad du jour" is, will produce new marketing gimmicks to profit from it. Gluten-free is the current health fad du jour.
The food industry lobby the government to subsidize corn making processed food and fast food extremly cheap,therefore people eat more processed food than healthy food. All American holidays were lobbied by some industry,, don't you think it is odd to have children go door to door during Halloween to beg for candy? Do people want diabetes?
