How you make it is not how the soy on the supermarket shelf is made. It is most definitely highly processed. And again....moderation and in simple form. I'm not saying don't ever eat any soy or soy product, I'm saying that people seem to think tons of soy in all its forms (some very processed) is good b/c "it's soy!"

Most everything you buy in the Supermarket is a highly processed industrial product, not a traditional "Food".
However, most tofu, especially if you buy it in bulk, is produced by local small companies who use pretty traditional methods. Of course the availability of tofu like this depends on the general Asian population of your locality. I imagine that there are many places in the U.S where you couldn't find any tofu at all.
I started buying soy milk. It taste different than regular milk, but I have gotten used to it over time. One benefit is it last three times longer than dairy milk before expiring.

And it also tastes great. Certain brands are better than others. Experiement by trying new brands.
Some of my favorite's are:
Silk original, vanilla and chocolate; Pearl original, vanilla, chocolate, strawberry; Soy dream classic vanilla, chocolate, carob. Kirkland vanilla.
i am trying to lower my intake of soy for an experiment, but i have a hard time letting go of my soy milks. I just really like them.
I can't go back to cow's milk. It tastes really nasty now after not having it for 10+ years, then trying some, i gagged.

I stay away from it, mostly because it has estrogen in it, and I think women as they get older get way too much estrogen. Men certainly don't need it. I am also lactose intolerant, so I drink almond milk, it's amazing!
Yes this is what I've read. A lot of the resources online say that soy is a health food that decreases hot flashes because of its estrogenic properties, but that is not what I've experienced. I took soy out of my diet four years ago when I started having mild pre menopausal symptoms. About six months ago I put a Balance Bar (soy protein meal replacement bar) a day back in because I thought I was being too strict. My hot flashes returned and I've lost some hair too. The reason soy does this is because it attaches to estrogen receptor sites.

The estrogen theories have yet to be proven. These studies were initially paid for by meat companies. It's like when studies were down showing that eggs were bad for you. Turns out Kellogg's paid a lot of money for that research.

I understand that...and I think we all have to decide for ourselves. I've really observed how I feel when I take soy milk and I feel a whole lot better when I don't. I also use a natural progesterone cream made from wild yams that is really beneficial to me, and has helped alot with treating fibroids. Investigate and judge for yourself.
