Somewhat, the smoking. However it is an primitive way to cook more than anything else(over an open fire). Using charcoal or propane to barbecue is kind of an modern twist.

Kebabs, which are popular in the middle east, and central asia are also a form of food designed to last long isn't it? They are essentially long meatloafs so they could have mixed preservatives in there.

propane use yes but not to charcoal which was used extensively in the West Indies.
