It was German-designed and, in some cases, German-manufactured equipment that nascent Israeli state was using. But they weren't buying the equipment from the Nazi state, so there wasn't any sort of ethical conflict therein.
Anyway, when times are tough you take what you can get. The Red Army happily utilized a whole lot of Shermans, trucks, and Spam produced by decadent capitalist pig-dogs, after all!
Germans used a lot of captured Soviet equipment. So did Finland.
It's amazing how much military hardware gets recycled and used years after they were first issued. For years during the time of US large scale military involvement in Iraq hundreds of WW1 and WW2 weapons, some stored and others ready for combat were discovered. A cache of weaponry worth hundreds of thousands of dollars to collectors.
One of the most curious were Mauser 1898 rifles that had been outfitted with modern optics and used as sniper rifles. The Iraqi military also had stores of the Famous PPSH Russian sub machine gun. Also recovered were German STG 44's the first mass produced assault rifle. There were also numbers of Sherman, Crusader and Churchill tanks discovered.
Apparently this was done in WWII-era fighters, especially those with poor views to the rear, like the Bf-109. It was mainly to keep the pilot aware of who was around him in dogfights. Individual pilots may have begun the trend, but it seems rear-view mirrors were incorporated @ the factory as the war went on.
One of the first mods the put in the F4s they got was to put rear view mirrors in. I remember seeing that on a show years and years ago. The Israelis have been innovative n a lot of ways in modifying equipment for combat. They've had enough experience.

In Syria's current conflict they found the rebel forces had mounted the STG44 onto a drone and used with a video camera to fly around and shoot at government forces. Strange combination of old and new.
The ME109 was the most produced aircraft in world history. Maybe because there were plenty of spare parts?
