I don't think 3/4 of the Luftwaffe fought on the Eastern Front, except maybe between June and November 1941. In November, Kesselring's Luftflotte 2 (in the middle of battle for Moscow!) was transferred to Sicily to aid Rommel. But until 1943 Luftwaffe managed to do quite well in the east despite not having many aircraft there.
The Luftwaffe went up against air forces (at least early on in the war) that had much older technology and also old TTP's (techniques tactics and procedures...not sure what they called them back in the day). Also remember that many allied pilots did not get into the war until much later...some only a year or two...Many German pilots had been flying over Spain during the civil war there....and flew on all fronts for the duration of the conflict...not 25 missions and "home"....
Those would certainly be contributing factors to high German scores....I guess a more accurate depiction of abilities would be to look at pilots with similar histories, flight hours, in similarly advanced aircraft for a given period of time when they both had similar numbers of "targets of opportunity" and time in combat...Shooting ducks in a barrel is really no test of skill.....
