I want to know if the many American versions of the Mexican War books are biased and/or fiction. It seems that most of the books do not covered both sides clearly, the relationships between the Mexicans and American forces, and leave out details in military performance.

Excellent topic and I am afraid I can not offer much. I have read Jeffrey Shaarah's historical novel "Gone for Soldiers" which is probably one of his best books and of which I really enjoyed.

I encourage other responses of non-fiction books.

So Far From God, The US War with Mexico 1846-1848
by John Eisenhower

An excellent and well balanced narrative of the war.

Like the Spanish-American War this is another conflict that played a MAJOR role in shaping the modern United States, yet so few know about it and so little is available about the conflict
