All poly finishes start out glossy, then for satin there are agents added to flatten it. One trick is to let the can sit overnight, then our off half of it into another container, stir the remainder and apply. That will concentrate the flatteners and give you a less glossy finish. Aqua Thane, a more expensive alternative ($50/quart), seems to be the most flat of the satin finish products, but is hard to find, usually only available at specialty woodworking stores.
