I would travel. Maybe I'd make it a goal to climb to the top of as many lighthouses in the US as possible - all 700 or so of them. Maybe we could travel via boat from the various destinations.
I would operate a luxury dog rescue.
When cruise ships get back up and running it would be fun to spend 3 straight months just living aboard cruise ships - go ship to ship and explore the various destinations and amenities.

J-boat - J-111 would be nice - for racing and coastal jaunts. Probably have the interior spruced up just a bit, for comfort. Wooden sailboat large enough to be seaworthy, hold a good book collection and provisions for months at sea. Schooner in the 120-foot range, I think. And a multihull for fun.
Workshop for boat maintenance - woodwork, rigger's loft, leather, sails, single malt.
And I'd be wanting to go back to school. Law, history, antropology...
