I simply hate a small rug that's only holding a coffee table. THAT looks to me like people couldn't afford a larger rug.

Sorry, but a 5x7 would work much better.
A 3x5 wouldnt even make it to the end of the sofa, and would be totally out of proportion to the size of the sofa, aka, it would have the appearance of a postage stamp on the floor.
Better yet, a 7x7 would be ideal, seeing as how the OP wishes to make an L shaped arrangement with the 2 sofas.

A 5x7 is pretty much what she was showing with the rug hanging out the end, a couch is only about 6' long at most so 3x5' rug would be just right.
You can have a rug cut to the exact size you need and they will bind it. I did it because I wanted a creamy shaggy rug round, and I gave exact measurements so it looks like it fits the way I wanted it to, as to not look like it is either to big for the space or to small.....

Re-read what you typed above. There is NO WAY a 3' rug can meet the edge of two 6' long sofas and not be small and off center. Think about it.
For all edges to meet the sofa, the corner of the 3' rug would be at the corner of the two sofas---extending only 3' across the front of one sofa and 5' along the front of the other sofa. That's going to look very silly.
Alternately, let's also detail how it would look putting a coffee table on top of a 3'x5' rug. The width of a small coffee table is appproximately 1'-6". With the coffee table centered on the rug, that leaves a mere 9" on each side of the length of the coffee table I don't know about you, but I highly DOUBT you would only want 9' between the edge of your coffee table and your sofa (in order for your rug to meet the edge of the sofa like you believe it should).
If you can't visualize these two scenarios, let me know and I'll draw diagrams and post them for you.
I've done this quite a bit for clients, always a nice look.
I have also had 2 color's together glued together to form a border than the middle color on the edge, $$, but looks great....that way you can put whatever colors you like...
sometimes custom is the only way to go to get really good results.
