Maybe it is a regional thing. You know in the Chicago area we really do things different. You ever seen out electrical outlets? 99% are laid out so the plugs are horizontal, not vertical. In places like Scottsdale, where a high percentage of Chicago area retire, the builders literally call that "Chicago style electric outlets". It is real option on their build sheets...

I never gave that a thought but I may be having a home built and I will certainly request that orientation it makes a lot of sense.
Horizontally mounted receptacles are usually used when the use of tall/built-up baseboards and/or raised panel wainscot are part of the trim package. Add a scrap block of 2X to the bottom plate and done. Mounting receptacles at standard height horizontally is a lot of extra work.
If the wall is sheet rock in the bathroom, I would use wood trim. I don't see the problem. Unless you are planning on having water all over the floors.
I have tiles in part of the bathroom, for the tub and near the toilet and the rest of the bathroom is sheet rock with regular wood trim, I also have wood floor in the bathroom as well. The walls are painted and so is the trim, no problems. Water doesn't get on the walls.
I have no problems with water, I use a bath mat it dries, I do not splash water all over the place...
Almost all homes in my region were/are BUILT by developers with wood trim in the bathrooms.
Of course, the areas near the bathtub and shower have tile walls.
same thing with my parents home, that was 47 years ago, the walls and mouldings still look fine. A coat of paint every few years and your good to go.
