Here's a real picture of a house we saw in the Fall Brunswick County, NC parade of homes tour - this is exactly what I need!! I would close off a few cabinets for storage; not so much open area.

Easy solution then. You can have some open shelving like in this picture but if you're looking for more storage, I would suggest cabinets with doors on them where they have the wine storage in this picture. The other bonus is how this idea gives you some functional serving space on top of it like a traditional sideboard. This could be built rather easily by a competent finish carpenter.
