We bought our house in the early 90s. It had very 1980s tile countertops. We replaced them with granite and I hated the constant maintenance. About five years ago, we put in quartz countertops. I love them! Super easy to clean and maintain and they look beautiful; just about everyone who visits our house comments on how nice our counter tops are. No question: if I bought a house with granite countertops, the first thing I'd probably do is rip them out and put in quartz.
So, for me, at least, granite is no longer a trend.
The other trend that I personally would like to see go by the wayside is stainless steel appliances. I fell into the trend and replaced an almond colored oven I loved so that everything matched. I hate the way every little fingerprint shows on my refrigerator and stove. If I could (can't for monetary reasons) I'd get rid of all of it.
I think the lesson learned is: don't put something into your house because it is trendy. Put it in because YOU love it. "Trends" don't live in your house; you do.

I've had granite in my last 4 houses and find them really low maintenance. I seal them when I put them in, then just clean them with granite cleaner when I do my cleaning. I wip up spills with a sponga and paper towel. They never looked stained...

Sometimes they're very successful at creating trends and demand. Sometimes they are less successful.
How long do you think some of these current trends will last?
Open Concept
Grey paint in every room
Very dark hardwood floors
Firepits
Granite (or has this one been around long enough now that it really isn't a trend anymore?)

I think the curse of the open concept is the NOISE! I was at a house for Thanksgiving with the open concept and the two TV's in the house were battling each other all weekend. Game on, TV is loud, kids watching other TV crank the volume up, then the game can't be heard so you crank that up!
I also think open concept will stick around. Its good for families. What I think will pass is two story rooms (20-24 ft ceiling). It's a waste of space and not economical for heating & cooling. It was a big trend with new homes built between 2001-2007. I think most of that is gone now with new builds.
I was in a new neighborhood recently and they took the high ceilings to a totally new level now!

Given a choice, I would not pick fake rock siding. Installation issues.
We have a 19' family room ceiling and open balcony on the second level. No kids, and I can definitely see how noise could be an issue.
But, we love it, particularly in the summer when the height helps the lower level stay cool.
I'm thinking stainless appliances have had their run.
