We also put both subway tile AND mosaic tile in our kitchen when we remodeled it a couple of years ago. I'm sure it would set some peoples' heads on fire with distaste, but that doesn't matter to me. We were going for a vintage look and subway tile is vintage. I love it, it's my kitchen, and my money and to heck with other people. One day in the future when we sell this house, if someone wants to replace the backsplash honestly, that's no biggie. No one with minimalist or midcentury modern or particularly trendy taste is going to like ANY of my house anyway, so it's not like the subway tile backsplash in the kitchen is going to be what turns them off.

LOL thank you and no, I don't have a cleaning lady, though sometimes I wish I did! Like right now. I don't want to iron and I actually have about four shirts that have accumulated that I have to go take care of. Ugh.
Personally I think it's all about how it's put together. From both those pictures, neither looks "high end" can they? Absolutely but excellent tile work can make cheap tile look high end, you can have the most expensive tile and if it's not installed well it will look cheap. It's about pairing it right with everything else in regards to rest of tiles, fixtures & the overall look and how it ties in with the character of the house.
Subway can be designed to stand the test of time, so can stone, so can many others. Unfortunately too often we see mish mosh and it loses it appeal.
