For me, I guess it would be a bad layout that would be very hard and expensive to change. Oh, and if no gas, I would hope to have the option to put it in.
Biggest deal breaker would be a small kitchen, room to move around and dodge jumbo dog and spouse is important, plus occasional guests can chat while I’m cooking. I’d also prefer to update it to my tastes and not have to pay more for an already updated kitchen.
A perfect kitchen would be a large, shabby kitchen with linoleum floors and Formica counters.
Being short, I would much rather have a dedicated walk in pantry/appliance "park" where I can see everything at eye level than cabinets above my head where accessing them requires a step stool. My ideal kitchen would have no upper cabinets (except maybe for display) and would consist mainly of a large prep area with the "pantry" nearby. Open concept is OK with me, but absolutely NO stainless steel appliances!
I’m also not a fan of stainless steel. Love whirlpools new sunset bronze line of appliances.
My absolute deal breakers are open concept, open shelving, and modern design. I don’t want to see the living room from my kitchen. Open shelving just looks like the kitchen isn’t completed yet- plus the dust that must accumulate. And I find modern design unnapealing.
Total deal breakers:
- Sink that faces a wall. It should be under a window on on a bar or island that faces windows.
- Cabinets staggered at the top.
Can't live with, but could be replaced:
- Black counter tops
- Busy patterns and "accent" pieces in back splash. Also square tiles used in back splashes, especially if they're done in a diamond pattern.
I'm fine with open concept if it's done well, i.e., not one big rectangular living area with the kitchen stuck at one end or in a corner. We've had our OC for 2+ years and I love it more every day.

Do you mean different heights or depths? That's become common around here, particularly in custom kitchens. Done well, I think it's beautiful and adds interest to the room. I'm building cabinets now for our retirement bungalow, and I'd stagger both height and depth if I had the ceiling to do it (not quite 8').

Heights. I know it's a current thing but *for me* it would be an immediate & total deal breaker.

Interesting how folks see things differently.
In all likelihood, your over-the-range cabinet (if you have one) is deeper...I expect nowadays for a microwave instead of a vent hood which isn't as deep. An over the fridge cabinet might be (should be!) deeper other wise it's a chore to use for anything.
