Thanks to everyone for their input - much appreciated.
We're now leaning towards knocking down half the wall - and installing a breakfast bar:
Some additional pics to fill in the blanks; wall-in-question is to the left of sliding glass door:
Your kitchen is not shaped like the one in the first photo. So I don't think it would look good at all, it would block the flow and natural light (which are your home's strengths). Your kitchen is a galley kitchen, long and narrow.
If you don't like the thought of removing the wall entirely, go for the full length glass divider doors that I linked to in my previous post. They divide a room without interrupting flow and light. Not to mention that half wall is kinda dated and the breakfast bar really serves no purpose. You'd be staring straight ahead into the dining space. I'd also go with the a table where that pantry/desk is (which is the intended use for the space) vs. a breakfast bar.
I just read that the "open" concept is on its way out. However, I would remove that wall...your space would look bigger and flow nicely. A little late to the conversation here, you've probably already done what you're going to do.

Did you hear that!?
That was me falling out of my chair LMFAO!!!
