The way the original question was phrased, I was going on the DIY perspective. A drywaller ... yeah, no issues taking care of something in hours that a DIY-er would end up taking up an entire weekend (or more). The pros have the tools and the skills to tackle such a job with ease; the DIY-er ... not as likely.

Back to goal of a flat ceiling ... less than $50 for drop cloths, a 10" wide knife, and a bucket of compound, it doesn't hurt to try, even if it takes up an entire weekend. Breaking out the wallet for $800+ in demo/new sheetrock/finish ... prolly not as palatable.

Any other way involves too much physical labor, mess, or both.

I agree totally. That way you will have a perfect ceiling. Scraping, patching and sanding are the worst, also you other idea with the fur stripping was also very good, lowering the ceiling a few inches is worth the mess.

PS: I have popcorn ceilings, I still like them.

This is a tray ceiling, so re drywalling or the furring strip idea doesn't sound like a DIY job. We'll probably opt to just sand our brains out until it's tolerable. It doesn't need to be totally smooth, just almost. Maybe we'll invest in one of those vacuum thingies for the sander.
I suspect we might get an estimate from a pro drywall guy, too.

You are only going to get a level 1 finish in one day unless you are using hot mud.

Even then you will not get a level 4 finish for the butt joints and a level 5 finish at the interior/exterior corners which is required for interior areas.

Level 4?

What? There's finished and not finished. And it can be done in a day- period.
