Try applying vinegar mixed with Chinese hot (to the taste) oil, or any other clear coating, that will deter the animal from chewing. Grain alcohol would likely work as well since it is 90% alcohol and the worst you may end up with is one drunken squirrel, but I don't think they would chew once they tasted the soakened wood. I think the vinegar would work best but use the alcohol if need be on the post.
As for horses who are "cribbers" no need for expensive solutions from the feed store. We used a mixture of cayenne pepper, red pepper flakes, mixed in a solution of vinegar thickened with a bit of corn starch then applied to the stall where it was being chewed.. One taste of that, and no more cribbing from that horse!
Squirrels and other rodents need to chew because their teeth are always growing. I've found plastic bottles in the back that had no food in them but were chewed down, just because they need to keep their teeth in shape. To me, they are no different than rats.
Squirrels are eating my porch also, I just drained a jar of jalapeno peppers and painted the porch rails. We'll see how they like that.
