I always use a strong foaming over cleaner for jobs like that. Just be very careful that you don't get any on yourself or breathe any of the fumes.

Ditto what others have said about Dawn. Whenever I need to clean the stove after a big fry-up or something it's always a multi-part process, first lots of soapy suds with Dawn or another dish soap just to get rid of all of the grease and crud, and then after mopping up all of that, using a regular spritz bottle cleanser (I use vinegar & water, my dad swears by Windex) to get rid of any residue and make it all shiny and streak-free.

I keep a spray bottle with water, ammonia, and few drops of ammonia for the stainless steel sink and other cleaning, such as the range top.

Those Mr Clean Magic Erasers work great. They do tend to pill up when using them, bu they'll get through the grease real quick.
