What is the best way to clean grease from a range hood/ exterior of exhaust fan unit? TSP? All purpose spray cleaners or straight ammonia aren't working for me.

Yep, third call for dawn. I use it on my stainless and then coat it with mineral oil.

I tried everything on the disgusting range hood when I bought my house. After two days I gave up and replaced it.

But, I did have excellent success with a product by Goo Gone for cleaning bbq grills. If I had this stuff at the time I probably could have gotten my old range hood clean. It did wonders on the used gas grill I bought that was a greasy mess. No fumes, really worked well

I like 409 too. If you have filters for the exhaust, those likely can go in the dishwasher too.

Try some regular dishwasher detergent, you may need to keep wiping it down to keep it wet and give it chance to work. Note I said dishwasher.

If that doesn't work there is product on the market called "LA's Totally Awesome" and the name doesn't lie. Other dregreasers like 409 are child's play.
