Anyway to waterproof a dining table? I don't want dinner spills, water glass sweat, etc damaging a wood table. Can it be fully waterproofed?

Marine varnish would work... but it might make the table look odd.

Have you thought of a glass topper? That's what we did for our kitchen table.

Put a lined vinyl tablecloth underneath a regular one.

I used to put a vinyl tablecloth or table pad under my regular tablecloth to prevent my table from being marred.

Depends comes to mind. lol But I don't know how they'd look on the table?

I'd use Maggie's idea of putting a lined vinyl tablecloth underneath a regular one.

A light sanding and a couple of coats of polyurethane- DONE!

Some people make things so complicated.

A vinyl table cloth will, as mentioned in the OP, keep spills, glass sweat, etc. from damaging a wood table.

I would think that if somebody had to go to the internet before hearing about polyurethane, they probably shouldn't be refinishing a nice piece of furniture.
