Little update:

My uncle came and ripped out everything else. He's an engineer and he also used to do flooring with my grandfather, who did floors for a living, so he knew what he was doing.

He brought the luan and put it down. Cut it nicely so that we don't even have to worry about the seams because they will be under the cabinets.

Because of 3493048 insane things going on right now, I had to: (1) hire someone to install shut-off valves (we never had any---gotta love old buildings) and (2) hire someone to now do the easy part and put down the tiles. Needs about a day to set and then tomorrow he can grout. Then it needs another day to set after that because the stove is coming on Saturday and I tried to reschedule BUT they wouldn't be able to deliver until the beginning of September.

I'm waiting for the chaos to be over. Right now it looks like a hoarder lives in my house because I have the old dishwasher, the new dishwasher, the old stove, the refrigerator, part of the countertop and everything from my cabinets in the office and living/dining area. AH.

I'm totally confused...

There's no need for luan if you're putting in ceramic tile(?)

To achieve a surface that is ready for vinyl flooring use luan. I see no need in sanding the old subfloor entirely- waste of time and money! There maybe some high spots that need a little attention, which a belt sander can handle.

Most flooring guys will use construction adhesive and a crown stapler to install luan. Once installed the edges/butt joints may need a smoothing (belt sander again)- its ready for the vinyl.
I'll just quote you!

Ah yes, forgot about those.

Let us all know how the grout stands up after about 6months.

I have to say I was very surprised at the overwhelmingly positive reviews of the products I had looked into. Most issues people had seemed to be self-inflicted.

I thought I'd let you know, since it's around six months and it popped into my head the other day.

I have had zero issue with the grout used with the groutable vinyl tiles.

I'm not sure what you were expecting to happen. But it looks the same as it did six months ago. No cracking, no issues with the flooring (I will say it could scratch easily so one must be careful) but other than that, nada.
