Wow, it has been 5 days and it still smells bad. Only thing that seems to work is opening windows and allowing flow through the house and out, but this is hard to do all the time due to weather. Any suggestions?
Side question: Are there less toxic/smelly products when doing this job? My contractor told me he got a headache working in the bathroom even the next day.
Fiberglass shower refinished? Was the coating epoxy?
Complete teardown of old bathroom replacing one piece tub with tile walls and floor. Apparently the spray is a moisture barrier/protectant and has dried to a mostly clear plasticy layer.
Obviously whatever vapor barrier was used needs time to "off-gas". Once its had time to off-gas and cure, I'm sure the odor will subside. Also covering it with tile will probably help too.

Close the bathroom door and open the window, if there is one. Place a fan in the window so that it blows out the window.
