Thanks everyone for the advice---- I think we are going to go and look at scrap granite this weekend. I hate granite. But I also hate living in this city and want to sell this house ASAP...... and if I can save money along the way to use in our future house, I can get over my distaste of granite.
I love quartz and that's what I have but granite is cheaper. I would go with granite in your case. I also don't hate granite. Honestly, I don't care what something is as long as it requires little to no maintenance and I like the way it looks.
I don't think quartz is trendy. I put Silestone (quartz) in a kitchen back in 2002 and it was plenty popular back then. I was very happy with it -- it looked good, was durable, and didn't require sealing, unlike granite. Just pick a neutral color and pattern.
