Yeah, that's what I have. Concealed all kitchen gadgets.
Even the TV in the den.

Why do some prefer to have it there?

One possibility is that it doesn't take up counter space.

I've always had mine at hip level.

Don't fill your bowls/cups to the brim.
But I agree, most of us want it at eye level to watch the food there. More entertaining than the TV, lately.

I wonder if I could mount a microwave on the ceiling beside my cutting board?

You don't know how tempted I am to take my pin nailer and mount a cheap cutting board to the ceiling over my stove, just to be able to post a pic.

LOL!!!
God; I needed that! Cheers, mate!

I don't want to lose counter space either but I also don't want my 5'3" wlfe to dump a bowl of hot soup on herself while trying to take it from head height down to the counter.

OK, time to share a secret trick here. Try not to buy soup bowls that are plates with a thin lip. A REAL soup bowl has depth and is 2.5" or 3" high. That allows some room for slop (a natural pun there). THEN... you can take a standard coffee filter, wet it, and drape it across the top of the bowl and secure the excess to the outside of the bowl before heating your soup. Now for the big reveal:
Spoiler

When you cover your soup bowl like that, you can microwave your can of beans, or chili, or chunky soup WITHOUT it having little explosions that cover the interior of the microwave with schmutz. After you take it out safely, remove the coffee filter and toss it. No spills and your microwave remains clean. Magic!

If a kitchen does not have enough counter space to hold my microwave, the kitchen is too small for me.

Every micro wave we've had has been mounted under the cabinet, can still use the counter space underneath it. Although, they are getting harder to find.
