... if there is no dishwasher in the kitchen.

I want to install an under the sink water filter system and there's an air gap where the water dispenser would be placed.

Can I remove the air gap in order to have the hole vacant so the dispenser can be fitted into it ?

Do I need to worry about any of the hoses currently attached to the air gap and where they need/should be rerouted ?

Or am I able to disable the hoses along with the air gap ?

Yes, you can use the hole for the dispenser. But, where ever the discharge line is connected to "waste"- either a dedicated trap or a disposal- that will need to be capped/plugged.

It depends if your local jurisdiction follows the International Plumbing Code (IPC) or the Uniform Plumbing Code (UPC). If it is the latter, then the air gap is required.

Maybe I'm not understanding.

A filter has a pipe going in and a pipe going out.

Or is this some kind of fancy reverse osmosis system??

Pretty sure the OP is installing a drinking water dispenser. It will be mounted where the air gap is presently mounted. The filter for the dispenser will be under the sink. Savvy?
