I recently went out of town for 10 days so I decided to turn off water to the house. Not from the main because I want sprinklers to run, just the water that goes in the house. I also tried my best to drain the water as much as I could before I left for my flight.
When I came back, I turned on the water. When I flushed I noticed a weird banging sound coming from the WC. It may be the air bubbles trapped in the pipe. The sound came from every toilet (3). How can I prevent trapping air bubbles or releasing them gently so I can safely flush or use the faucets without hearing those air sounds.
* After I flushed each toilet, the sound does not come anymore but I am asking for future references.

If you use ice from the ice maker on a regular basis, it continues to make ice even with the water off. And since there is no incoming water a void is formed within your plumbing supply system- that equates to “air in the lines”.
When the water is turned back on- the air is forced out. The best way to clear is open the highest point- usually a showerhead- whether it’s a ranch or two story.

In addition to the ice maker, draining the lines also puts air in the lines that then gets "blown" out when water is turned back on. It would seem that the toilet(WC)'s fill valves were not happy with the "blown" air.
Yeah, go ahead and turn off the water, but don't drain the lines. You're making unnecessary work for yourself and may be stressing the pipes as well.
This. Unless you are going to be gone for a while with the house subject to freezing temps, just turn the water off and don't drain it.
