If it really is that thin stuff, pretty much case closed.
I would just do a rip out and replace with similar, do the entire thing if I had to. Money wise you probably come out ahead. You can spend the same or more on stripper, supplies, stains, finishes, etc and it will probably not look as good. If you sand thru in spots, you are stuffed. Rip out makes sense in terms of time, money and final product.
Put some extra in some nice trim and call it square. Might even go whole hog and take out the old plaster if that is the case, check the insulation, use the project to do any wiring required, do it up brown.
or you can just do what I do do it yourself when he is out of town
