Spousal unit wants to hire a GC to take care of everything on the punch list, while I'm not sure what kind of value added we'd get for going through a GC for things like the windows and pipe fix because we already know someone we'd be comfortable with for those items.

Hers is another take on a GC: and take with a grain of salt because I don't know the extent of your construction knowledge.
When they get pricing from the trade he will tell the trade( just an example) when they fix the roof leak make sure that theyreplace any rotted plywood and use ice and water shield at the patched area. Or when you replace the windows make sure that you get the flashing on the head of the window to properly drain the water away.
Because some trades and not all will tear it apart and say here look at this, this will be an extra because we didnt figure this my proposal.
Just a different take on the GC thing.
