I work at a church in the West U area, and we are wanting to cater an event. We're not wanting to spend very much person, probably around $5-$7 a person.

We don't want anything fancy, something simple would be fine. Does anyone have any good ideas? Thanks!

Try Dave and Busters, James Coney Island or Pappasitos. $5 - $7 per person narrows it down to just a few, cuz you're talking self-assemble taco/hot dog/fajita bars.
