A quality paint shop will not spend "a couple grand" on just the paint for an average complete paint job on a daily driver. Shops are set up with special pricing agreements from paint distributors. Good paint is expensive, but 1 car doesn't use that much. Sure you can go through a lot of clear if 3 coats are applied, but its not going to approach 2K just for paint.

For a daily driver no but for a real paint job yes they will. I had a friend that did paint job on mostly muscle cars and classics. He would easily spend a couple of grand on paint and even more for a candy paint job.
