I had rear speakers in my media room, and had them calibrated. Also got our tv tuned to just the right blackness levels.

Formal Dining Room is a wasted space for me...
I prefer to have a Bigger Media Room ....my current room is small

I'll have to say, that looks like a great home theater. Double kudos for DIY.
I'd love to have a 15' x 18' HT. You may consider that small, but I consider that good size for any home that's essentially not a mansion or have a huge basement ready for conversion.
Did you put transducers in the seats? If you haven't done so, you may want to consider it. Here is one of several threads about them:
