BB's for po-boys and other Tex-Cajun stuff (already mentioned by someone but worth it again - also has locations in fun neighborhoods).

La Fiesta for straight-up enchiladas (stick to the basic stuff here) and combo plates.

Chuy's is an inexpensive, fun Tex-Mex place with several locations (regional chain from Austin). My in-laws always want to eat there when they are in Houston.

Mmmm, Chicka-Chicka Boom-Boom enchiladas...

Go on Sunday for the special, Fat Daddy enchiladas. some here like them better than Boom Booms. The sauce is really good.
