Just go less often to the nice ones. I don't think the steak at any of the one's listed are worth the money and/or trouble. Buy steak at Costco and make at home for less expensive.

I lived pretty near Saltgrass and Longhorn for a while and of the two, I think the service and the steak was better at Longhorn.

Umm, I actually find steak to be one of the easier things to cook at home, as long as you choose a good cut to begin with. Prep is pretty easy: allow it to sit out of the refrigerator for a bit to bring the temperature up, apply your seasoning rub (or vice versa), heat up the grill (having the grill at cooking temp beforehand is critical), and put your steak on. It does take a little practice and observation to get to the preferred level of doneness, but once you figure it out it's fairly straightforward (thicker steaks are the most difficult). I personally look forward to steak night for the relatively low effort involved.

To me, eating steak out at regular restaurants is only worth it for unusual cuts, special aging processes, or unique prep/cooking approaches that you wouldn't do at home. But this kind of thing is pretty much only at high end places, so you pay a pretty penny.

That said, steak nights at beer joints and bars can be fun and pretty good deals.

When I go to Texas Land & Cattle (the only one of the listed places I visit), I get the salmon, which is really good.

I don't cook steaks on the grill though. I sear the steak on a cast iron skillet and then put the skillet in the oven at 450 degrees. Steak on the grill is a waste of a good steak. High end restaurants cook similar to this method or over a wood fire. Clean up on the Skillet alone is worth the trip a restaurant.
