What are some must see restaurants and bars to impress a German who's stopping by Houston for a few days?

Like when I say must see, I'm talking about food that is must eat and amazing drinks.

Why do you care about what a snob thinks?
Don't take him to an European restaurant. They can't be as good as what he's used to. Try well regarded restaurants that serve local or Mexican food like Hugo's, Hay Merchant or Theodore Rex. Maybe try something not found in Europe like Viet-Cajun crawfish or Texas barbeque.
Boheme has good mezcal based cocktails and their food menu's interesting.

Take him to Cracker Barrel since a snob will be a snob anyway.

If he's the sort that loves beer that drinks like you're trying to pour a loaf of bread down your throat, drinks it at 50 degrees F, and claims that all American beer is terrible and that we drink it too cold, have him come to Houston in August and walk him around for a while in 95-degree/90% humidity weather.

Then get him a long-neck Lone Star pulled from a tub of ice.

Masraff's on Post Oak. or Brenner's on the Bayou. I've taken clients to both as well as my family.

Well, we don't know if his friend is really snobby ...
OP, care to elaborate?
Also, I thought you know where to take him out to eat.
On other forums you claimed to be a great expert of American food, and all those fantastic restaurants where you dine...

Right! You want him to gulp down a liquid ice, and sweat like a pig. Great impression!
