Perhaps you could share some recipes for the smaller species. I baked them in the oven and found them too 'fishy'.

A little bit of lemon juice on flounder will smooth it out.

I was talking about croakers, sheepshead, and sea trouts. I always thought flounders were good eating.

Filet them and cook in a skillet in some olive oil. Apply salt and pepper first. They will still be fishy to a certain extent.
