I haven't found any awesome Mom & Pop breakfast place here yet. The best I've found so far is that Stafford is right next to Sugar Land and has
Avalon Diner and
59 Diner .

america's buffet is pretty good, but they only serve breakfast on weekends...its on 59 between hw90 and kirkwood i think? its right across the Fountain...
