I suggest visiting subdivisions where custom builders have homes under construction so you can visit with them and see the type of work they do. Two areas to check out are Riverstone (near Sugarland) and Avalon at Seven Meadows (Katy). They both have quite a few custom homes under construction right now.

To add to your list of custom builders in Houston:
Partners in Building
Westport
Bayou Bend
Sterling Classic
Christopher Sims
Peterson

I've walked through their homes but can't give you any information beyond merely providing the names. You'll have to take it from here...

my wife builds for a company named MCVAUGH custom homes. they build a very nice product in some of teh highest end communities in the houston area. they will build what ever fits you where ever you want them to.

American Traditions custom homes, well worth putting on your short list of builders to interview. This comes from someone who works with many custom home builders and pool builders, and I like what I see.

Houston Custom Home Builders and Designers, Construction and Decorating is Frontier's website. They did 2 sections in my neighborhood and some of the nicest houses I have ever seen. Should I ever find myself with 500k to drop on a house that is who I will be going to. I have clicked to the websites of some of these others posted and frankly the houses shown are very underwhelming.
