Houston is a major hub for the energy industry. So if a country has natural resources they will likely try to establish a presence here.

Well that would rule out Israel.. but they have a consulate here in Houston.

Energy is just one reason countries have consulates here. Israel has energy companies. Financial is another, people travel to Houston from all parts of the globe.

I wonder where all of these consulate generals are located. I know there's one or two in Uptown. Then, there's the Mexican one off of San Jacinto and 59 right when you're leaving the Museum District and crossing into Midtown. The Chinese consulate's office (I think) is off of Montrose near the University of St. Thomas's campus.

Anybody know anywhere else?

A majority of them are Honorary Consuls. The Honorary Consul is often not even a citizen of the country he represents, and typically runs the consul out of his private home or his business office where he does whatever he does for a living. He normally would have had some close business ties in the past with the country he represents. The consuls to Barbados and Ukraine are in Sugar Land, and several are in The Woodlands.

Recall the other day that Jill Kelley (seductress in the Petraeus case) called 911 and claimed she had diplomatic immunity, since she was an honorary Consul to South Korea in Tampa.
