my family and I are moving there this summer and my daughter is going to be starting her sophomore year there as well. We live in Boston MA at the moment and we're taking a trip there in April. I just want to know what part of Houston has the most Asians (Viets) and which school should my daughter attend?

I highly recommend Sugar Land. Fort Bend is a great school district.

I see a lot in the Veterans Memorial Area of Spring and also of course Bellaire/Sharpstown/Alief area which is where the "China town" area is at although it is more like Vietnam town.

Alief has the most Vietnamese people. You might want to consider private, however. If your daughter is gifted, she can apply for Kerr High school within the district. They are as good if not better than many other schools in the area.

Asians in general assimilate well into the greater Houston area and are spread throughout the area but as others have mentioned there are certain areas with higher population concentrations.

Without looking at the link, I would say Southwest. Sugarland and Alief areas.

No they don't. They stay pretty much the same their first generation (try marrying one of their daughters and see how accepting they are). It's just that their first generation characteristics don't bother white people like first generation Mexican characteristics do.
