Can anyone recommend an affordable counter installer in SW Houston (I'm fine with stock counters - I just want an inexpensive fix). I don't want to tackle this project by myself and I can't see spending the $ for granite when we will not realize any increase in value on the sale of our house...

Very few people install laminate anymore. If you buy 'stock' laminated tops from HD or Lowes, they may be able to point you to a contractor that could install for you.
