Well I finally got around to trying Thomas Pit for ribs the other night and was extremely disappointed, which I was not expecting since they come highly recommended. I got there about 6:30 and the line was all the way to 72, so I went inside for my to-go order, which was much quicker. I think only 2 cars had moved and I was already in and out.

Anyways, the ribs were horrible! Extremely tough and mostly fat. Good ribs that I am used to fall right off the bone and literally melt in your mouth. The only redeeming factors from Thomas Pit was the sauce and the bread. I threw over half a poud of ribs b/c they were too tough to eat. Is this normal or did I just catch a bad batch?

Since Thomas Pit is now on my "do not frequent" list, who else has good ribs?

I'm partial to Little Paul's by Huntsville Hospital or Big Bob Gibson's over in Decatur.

Just a little FYI, ribs tend to either come tough or fall of the bone tender. There are two different styles. Some like it to fall of the bone and others think ribs are best gnawed on.

I personally like my ribs to fall off the bone. The original guy that started Dreamland believed ribs were best if gnawed. Just 2 different styles.

North Alabama has wonderful BBQ, but ribs is a johnny-come-lately here. Most folks cook what's known as pulled pork. Several restaurants, however, are getting into ribs. I recommend bb perrin's in Decatur. Gibson's is a crap shoot - they might be wonderful, or they might be awful.

And never get BBQ on a Monday.
