We live off of Browns Ferry and County Line. Not bad, but yes there are planes. More noise when the weather is bad. Worst noise is the C5's on weekends doing engine out landings. Other than that, it is not bad. We just look up and wave.

I'm about 90% certain an IFR ILS glide slope is at a lower angle than a VFR VASI glide slope. Meaning, in instrument conditions, the approaching aircraft will be at lower altitudes on final approach.

Huntsville airport never seems busy. Why is there a need for more runways?

Nope. Nominally, both are 3 degrees. If anything, VFR aircraft are going to be lower further out than an IFR aircraft, because you want a greater safety margin when you can't see the runway.

Referencing the approach plate for HSV, aircraft landing to the south will be 1500 ft AGL at 4.5 NM. At around 10 NM they are at around 2500 ft AGL.

I've wondered the same thing.

Default I think I bought where Sarges Dad used to live

About 3 miles North of 72 near Old Railroad Bed (County Line). The 1st couple of days I was there, the planes kind of bothered me. Many go directly over my house, but they're still pretty high up (i.e., can't tell which airline). But I had the windows open, and my neighborhood is very quiet. After about the 3rd day, the quiet was kind of creeping me out (especially at night), so I actually liked when the planes broke the silence. My husband lives there full time now, and he tells me he doesn't notice the planes anymore. They tend to come in spurts of 3-5, and then nothing for a couple of hours or more. Some days, the planes are more to the East or West... not sure why. The last time I flew in, I had a window seat and could actually see my street from the plane as we circled around to line up with the runway. In any event, it's much better (quieter) to be in the landing path than the takeoff path. Because the prevailing winds are from the South, it is rare for the planes to take off to the North, but it does happen, so you need to consider that.
