With my old offline POP client I could do all sorts of 'housekeeping' tasks with little effort
but gmail doesn't appear to have any obvious ways to do such simple things.
I think the genius' at google consider this an improvement.

Anyway, I have too many of them.
I'm looking for a simple tutorial/instruction of what the required steps are to:
1) RENAME a folder I created, and
2) DELETE a folder I created.
As always any and all help is appreciated.

Just have to change your perspective. Labels =/= folders.
Folders act as containers to collect/organize message. Labels are not containers since you can apply multiple labels to an email message. It's really just a way to "filter" the email. For the most part, you can use it as folders but it's not quite the same.
Personally - The beauty w/ Gmail is the ability to use its search function, When I first started to use Gmail, I treated labels like folders. But after getting used to the search function, I don't even use them anymore. I just archive the email and do a search for it whenever i need it.
You can manage your labels (modify, delete, etc.) through settings -> 'labels' tab.
