The water seems very "grey" and dark in all of the videos I watch... In South Florida the water is brighter blue / turquoise...

I would love to hear a real, researched answer to this. I've heard everything from treebark tannins to dirt-vs-sand, to gulf stream effects, to different types of bacteria and microorganisms. Seems there are as many theories as there are shades of brown and grey in the water.

I do wish we had the crystal clear waters of S Fl.

I think around the Stuart area it starts to get blue. If you look at an aerial or satellite map you can literally see where the blue water is.

Put it this way, if the water around here was more of a turquoise or blue. Our homeowners insurance would be a lot higher.
The water around here is the color it is because of the marshes and St Johns River which originates from the Everglades. There is a high concentration of Tannin (plant decay). Durring the Rainy season the local rivers and creeks run high and faster which adds turbidity and brown color. So the Ocean looks a bit unattractive durring these times.

If we have little rain and the winds are favorable the water is just gorgeous.

I fish down at Vilano a lot and when the water is nice, it is just beautiful.

It might be shallower in South Florida. Biscayne Bay is very shallow, as is the ocean side of Key Biscayne.

There are no major rivers like the St Johns dumping approx 15,000 cu ft of tannin stained water a second into the Atlantic ocean anywhere in south Florida.

This is exactly what I thought it was. Just an assumption but I feel fairly confident with this explanation...and know many others who assume this as well.
