For kayaking, try First Coast Outfitters in Jacksonville or St. Augustine Eco Tours in St Augustine.

Not sure of anyone who hosts a tour on SUP, just straight up rentals.

Second on the Teenage girls and the day at St. John's Town Center! My 17 year old niece comes multiple times a year and ALWAYS wants to spend AT LEAST one day there. I totally don't get why you would come to the beach and want to spend the day at the mall, but apparently it is a MUST in the 17 year old world! Drives me nuts, but she hits it every time she is in town! She also loves just strolling around St. Augustine, she enjoys the Alligator farm as someone mentioned and she likes the Ripley's Believe it or not museum - it does have some pretty cool stuff in there if you have not been there. All the other things you are planning sound awesome. As someone else said, I wish y'all were my uncles - these girls are lucky to have such fun, caring men in their lives!

Take them to a bar and teach them to drink responsibly.

You'll gain instant credibility as a "cool" uncle, so even if the trip is "lame" to them, they'll still remember it well because you let them drink.

Heh, love this. Or, another option, take them to the landing on biker-gathering-night and scare them out of drinking. They'll never forget that show either.

There's a Groupon deal on the Ripley's museum right now and a couple of SUP offers as well.

I would post the link but I can't remember if that's illegal or not.

I have a 17 year old teenage daughter. You will please them with shopping at the town center and malls, the beach, kayaking, and walking around St Augustine, even a ghost tour and some other evening activities... I don't know many teenagers interested in museums, well, Im sure there are, but girls this age coming to Florida on a vacation want to go shopping and see the Floridian boys. Plus if they haven't been to Orlando, the Florida Mall is great and/or Sea World or Universal Studios for a day! Have fun!
