Thinking of visiting JAX and hoping to try restaurants that source ingredients locally and thus serve a seasonally-changing menu. I'd also prefer to patronize businesses that source meats from farms where the animals were raised humanely, ideally on pasture.

Any suggestions?

"Locally" (regionally really) sourced ingredients are common at the following restaurants off the top of my head:

Townhall
Moxie (both operated by Chef Tom Gray)
Rue St Marc (by Chef Matthew Medure. I would think his other restaurants are the same: Matthew's and Restaurant Medure)
Restaurant Orsay
Black Sheep (both operated by Jonathan Insetta)
bbs
Biscottis (both operated by the same group)
Taverna
Kitchen on San Marco
Uptown Kitchen
Marker 32

There are probably others, particularly some that aren't quite as "fine dining," but I'm not as certain about their ingredients.
