Not long ago we went there on a Saturday and could not get in because it was at capacity. The ranger said that it is always like that on the weekend. You might be out of luck.

Our experience is anecdotical but for the last 4 years, at different times or days, we never had to wait (or maybe once for 15 minutes.) Often when we pickup/drop some overseas visitors at MCO, we allocate one-two hours safety margin for traffic and we always stop there. It is a nice break.
If schedule allows, I would try to get early in or towards close time.
if the OP flies back during the week rather than a Saturday, it may be an option.

There is little to lose as it is a 15 minutes detour from MCO to I-95N.
And these manatees are spectacular...

Amelia River Cruises based in Fernandina has tours which take you around Cumberland Island. The ferry from St Marys drops visitors on the island but you have to take all your provisions with you. It is very primitive. I think you have to stay for most of the day. The Amelia River Cruises are enjoyable and they have a daily eco tour perfect for children.
