This subject was mentioned in another thread - and thought it deserved one of its own. Did a little search - and believe it or not - you can canoe with really small kids (the picture of the little kid in the link below is adorable):

There are tons of places to canoe in north Florida - including a lot of state parks. This is one of my favorites:

Now no one could ever accuse me of being a "great outdoors" kind of person - but even I have spent a fair amount of time in canoes in Florida. Note that all major canoe areas are rated by degree of difficulty. You're not going to want to do difficult places with rapids with young kids (they're not my cup of tea either) - but there are lots of places where you're dealing with very calm water. Another thing to take into account is you don't want to go to areas that involve portage in shallow water if you have really small kids and there are alligators around. Although we have *very* few alligator attacks in Florida - there have been a couple on young children in this situation (the alligators mistake the very small children for dinner).

We also have a lot of "hot springs" in north Florida:

This is kind of a misnomer - because the "hot springs" are cold IMO (constant 72 degrees year round). But they can be a refreshing place to take a plunge on a very hot day. One very popular summer activity is tubing down Ichetucknee springs (a little north of Gainesville):

The best resource for activities like this (especially kayaking) is Black Creek Outfitters - which is across the street from Costco (it even has a lake there where it gives lessons):
