I cross my hands in front of me when listening and use gestures when talking. What you do is important, as body language (non-verbal communication) is important during an interview and conveys confidence, or lack of.
Agreed I make sure if I am interested I am leaning forward, taking notes, and having an engaging conversation.
Never cross your hands or arms in an interview and more importantly, never lean back in your chair. I always position myself with an inward lean to the table and arms open, portfolio/folder open in front of me and a pen for writing. It's ok to hold the pen now and then, it shows you are attentive and ready to take notes. Don't fidget with it though, put it down if you catch yourself doing it, it will be a distraction to the interviewers.
Also, if there are multiple interviewers, when one asks a question or talks to you, square your body up towards them so they know you are giving them your full attention.

Lots of info on body language on the web.
I catch myself sometimes doing the "lean back" when we have really good rapport and the HM is doing the same, then I realize he can do that, maybe not for me.
