I have a job interview tomorrow in a screen printing shop. I'm not too good in all aspects of the screen printing process, but I do want to get better at it. It's going to be part interview and part screen printing to show him what I can do. When I asked the manager on the phone if the interview is for a job or internship, he said it's all up to me. If I show him tomorrow that I'm not too good at it and need abit more practice (unless I get lucky), does it seem desperate or silly to ask him if I can do a 2-3 week unpaid internship to get better at it? I didn't get much practice with it when I was in school and I feel that I would get alot better at it if I practiced screen printing for 2-3 weeks.

If you screw up you may not have any other option but to do an unpaid internship for a couple of weeks, to make it worthwhile for him to hire you. Personally if that was the only option I had available, I would throw that out there if I did not get the job any other way.
